Her First Peanut: Elle’s OIT Success Story at Safe2Bite
Elle has had a peanut allergy her entire life. For her family, that meant EpiPens everywhere, reading every label twice, and her sister hiding her peanut butter sandwiches so Elle would be safe.
After months of oral immunotherapy (OIT) at Safe2Bite | Texas Food Allergy Center, Elle was ready for the moment her whole family had been working toward eating her very first peanut.
She wasn't rushing it. She picked it up. She looked at it. She stared at it. For nearly 10 minutes, our entire team stood by her side alongside her mama and her sister, holding our breath and cheering her on silently.
Then she ate it. She liked it.
No reaction. No hives. No fear. Just a little girl grinning ear to ear, proud of what she had just conquered.
But the moment that got all of us? Her sister.. jumping up and down, overjoyed and shouting that she doesn't have to hide her peanut butter anymore. That's what food freedom looks like. Not just for Elle, but for her whole family.
As a board-certified allergist and a food allergy parent myself, this is exactly why I specialize in food oral immunotherapy for peanut and food allergies. No child should live in fear of food, and no sibling should feel guilty about eating a sandwich.
Elle, we are so proud of you.
From Avoidance to Action: Beginning Multi-Allergen OIT with Confidence
Day 1: Three Allergens. One Brave Kid.
This little Safe2Bite warrior is just 4 years old and today, he sat on our treatment table and took on peanut, cashew, AND walnut all at once.
That's right. Multi-allergen OIT. Day one. Done.
His mom knows this journey personally. The fear of every meal. The constant label-reading.
The EpiPen that never leaves the bag. She brought her son to Safe2Bite because she was tired of just avoiding, she wanted to treat his food allergies.
And, they did.
Multi-allergen OIT means we don't make families come back three separate times for three separate allergens. We tackle them together, safely, under close medical supervision — because these kids (and their parents) have waited long enough.
This is just Day 1. There's a long road ahead of tiny doses, gradual increases, and a whole lot of goldfish crackers in our waiting room. But that smile on his face? That's what hope looks like when you've been told your child "will just have to avoid it forever."
We disagree.
Safe2Bite — Southlake, McKinney, and Frisco Specialized food allergy treatment for kids and their families. Treating one bite at time.
Caden’s Cashew OIT Breakthrough
For his entire life, Caden avoided cashews. Every label checked, every meal questioned, every social gathering navigated with caution. Seventeen years of "no, I can't have that." When he came to Safe2Bite | Texas Food Allergy Center, we did thorough testing and diagnostics to understand exactly where he stood. The results opened a door he never expected.
And then came challenge day.
That's Caden — eating a cashew. No reaction. No fear. Just a teenager finally free from a restriction that had defined his whole life. Seventeen years of avoidance. One challenge. A lifetime of freedom ahead.
If your family is living around a food allergy, there may be more options than you realize. Let's find out what's possible.

Rishaan’s Peanut OIT Confidence Journey

But through the Safe2Bite Oral Immunotherapy (OIT) program, Rishaan has gone from being severely allergic to peanuts from peanuts to safely eating whole ones without a reaction! Because of his desensitization, his parents are finally able to have peace of mind and Rishaan is able to attend parties, and school without his loved ones fearing for his health.

Deva’s Egg OIT Turning Point
Being diagnosed with a life threatening food allergy to egg was very scary for four-year old Deva’s parents. They, like many food allergy parents, were worried because eggs are so hard to avoid as they are prevalent in many foods. Their concerns were met immediately when they learned about the Safe2Bite OIT food allergy program. Currently, little Deva can tolerate egg whites and is on the way to being able to consume other delicious foods like french toast, scrambled eggs, and quiches!
Aradhyaa’s Milk & Egg SLIT Success Story
Aradhyaa, allergic to milk and egg, is on her way to reaching allergy freedom at Safe2Bite! Her multiple food allergies are being treated with Food Sublingual Immunotherapy, a convenient treatment when food allergy drops are placed under the tongue to stimulate allergy cells, which will lead to desensitization. Many families like Aradhyaa’s love this treatment option for their children because it serves as a way to have cross contamination protection or in Aradhyaa case it is a smoother entry point to oral immunotherapy (OIT) as it primes the immune system and prepares it for OIT.
Sutton’s Egg OIT Breakthrough
Eight-month old Sutton is on her way to food allergy freedom! Initially, she could tolerate eggs, so it was a scare for Sutton’s family when she developed hives and swelling. This allergic reaction prompted Sutton's family to bring her to our Safe2Bite Food Allergic clinic, where she passed her first food challenge for baked eggs! We look forward to celebrating with Sutton in all the food allergy freedom wins to come!
